Mexican Chicken Rice - 1 Pan Meal

Mexican food is one of the few things I really miss here in Australia, so I've been learning to make Mexican dishes myself. Mexican Rice with Chicken is and easy and quick meal and is yummy! All you need:
1. 1 Cup rice
2. 2 Cups water
3. 4 Table spoons Chicken broth
4. 1 Can tomatoes
5. 2 tsp garlic
6. 1 tsp Coriander (Cilantro)
7. 2 Large chicken breast fillets
8. 1 Onion
9. 1 Green Pepper
10. 2 tbsp Corn starch
Cut your chicken fillets up into bite-sized pieces and stir fry them in some oil with garlic, chopped onion, and diced green pepper. Do this over medium heat. When the chicken is done, pour in your water and add the chicken broth, corn starch, and cilantro. Bring to a boil and add tomatoes - takes 15-20 minutes for the rice to cook. Keep food moving in the pan every so often. After the rice is cooked, keep stirring and allow the water to evaporate. When you have a nice consistency to your sauce, you are ready to serve. This meal takes approximately 45 minutes with prep time - You can spice it to your taste with cayenne pepper and serve with corn chips. Enjoy!
